incoming

there's a lot of shake-ups going on at my work, an outgoing head chef, an incoming kitchen manager, a promotion and a reorganization of my responsibilities. which i guess is kinda nice cause i'll be going from a straight up line cook to someone with a set schedule, fixed responsibilities, and some kind of say in the way we run the kitchen.

it's all very exciting, all very scary too. change is like that, opportunity is a powerful feeling, but you always wonder if you're gonna choke or drop the ball.

winners want the ball.

i love laptops

well, at least my new roommate's anyway. if only for the simple fact that it let's me finally get back to posting again on a site that i'm pretty confident has been abandoned by almost all of the few readers i had.

i'd also like to take this opportunity to publicly apologize to anyone i've been dogging lately. i never imagined a time when i'd be that kind of flake, when i'd dive into a job so deep that i couldn't even return a phone call. but if it's any consolation to people who miss me, i'm having a very good time learning how to ACTUALLY cook versus memorizing ingredients in regular menu stuff. my chef has actually taken a lot of time and been very good about teaching me how to make the different classical sauces, how to perfectly sear fish, and the best way to time component in complicated entrees so it all comes together at the perfect time.

so yes - sorry mom, drew, bret, mike, john, etc et al. i'm getting into a position of authority where i should be able to free up more time for the people that matter.

also, living back in the city a good five minutes from my 60hr work week sure helps out a lot.
