who are they?
Barback - The guy putting cold beer into a fridge and washing glasses in the triple sink without looking up to see if anyone wants anything. Be a pal and get out of his way when he's clearing empties off the table or pushing past you with two cases of beer. HE CANNOT POUR YOU A DRINK, LEAVE HIM ALONE. Hostess - They look bored, and are meant to, but will be the first person who greets you with the phoniest/nicest smile/hello. They are also usually the nicest dress, they don't have to work so they won't be messing up their clothes. Doorman - Big or tall, skinny or whatever, they're in charge of getting you in and out. Usually wearing a t-shirt with the bar's logo, he's allowed to get rid of the unruly or overserved. DO NOT show up with out-of-town guests who forgot their IDs unless you are a regular (you drink/eat there three or four times a week) Manager - The guy/girl with the receeding hairline and/or glasses. Probably slightly older than most of the other staff, he's usually at a vantage point in the bar where he/she can see the most going on. You can really only ask them general questions such as where the bathrooms are, what time the place closes and what band is playing tonight. They should also be picking up the slack in the realm of the host, barback, or doorman.
